Do you like comfort food and sweets? I sure do!
How about eating a comfort that's sweet and healthy?
That is a big YES for me!
One day in my kitchen, I sat with my BBF (Best Friends Forever) Angela catching up on life.
I was making pancakes for my breakfast. I was telling Angela about this new recipe I had discovered for healthy Gluten free pancakes, but it seemed to be missing something.
Angela has a back ground in cooking and is very intuitive, so I knew she could help. As I mixed the ingredients, she said excitedly, "you know what would taste good in the pancakes, zucchini!"
I yelled out, "OMG, perfect!"
I grab the zucchini off of the counter, we had a ton of it, due to the fact of living in Michigan in the summer, for some reason there is always abundant of zucchini. Tons and tons of zucchini, gifted to me by friends and family almost daily.
As I began to shred the zucchini with a cheese grater, a photo of pecans floated across the room, Spiritually wise of course, or magickally!
I knew it was my Spirit guides giving me the final piece of the recipe.
So Angela and I continued to talk about life, husbands and kids as I blended all the ingredients together. Infusing the pancakes with the energy of love and friendship.
Once the pancakes were made, we added maple syrup on top and each took a bite.
It was soooooo good. It gave you a comforting, calming, and loving feeling. Like no matter where you ate them, you would feel like you were in the safety of your friends.
Often I make these, when I need that feeling. Especially if I haven't seen Angela in a while. We both have our own lives and families, so to get together often doesn't seem to be often enough. We do make it a point to see each other on a monthly basis, to catch up. Every time its like we haven't missed a beat! Having Angela in my life has always given me that safe, loving, comforting feeling. I love you Angela, my BFF!
BFF Pancake Recipe
1 cup shredded zucini
1/2 cup Pecans
1 cup gluten free flour
1/2 tsp baking powder
1 tablespoon honey or raw sugar
1 egg or egg replacement
2 tablespoons Ghee or Vegan Butter
1 cup Almond Milk to start6, add more for the consistency of your preference. I like mine a little thicker.
A few drops of Vanilla
Mix all ingredients together as you think about your friends or talk to a friend. Or think about thoughts of comfort and love. The pancakes will be in fused with your thoughts as you blend them. They are magicakal!
Heat up a little olive oil in a pan.
Pour pancake batter into pan, cook till preference. I like mine more crispy.
Top with Ghee or Vegan butter and Maple Syrup.
Enjoy by yourself or with a friend!
*Angela and I have been best friends since the first day we were given a locker to share in 6th grade. Which nether of us knew how to open the locker so we just carried our books for the whole year.
For the last 33 years we have been there for each other through every life experience you can think of. Junior High, High School, Heart breaks, birthdays, holidays, divorces, marriages, brain tumor, having kids, vehicle accident, miscarriage, house fire, being homeless, Spiritual awakenings, Karaoke Nights and the most recent, the death of my best friends husband of 17 years, Rich on May 23, 2021 unexpectedly.
That last one hit us all pretty hard.
