I Loveeeeeeee Pumkin Pie!
Recently I was diagnosed with gastroparesis. I have been taking my favorite recipes and turning them into something I can eat.
Pumpkin pie has always been one of my favorite pies. My favorite part of Thanksgiving!
Now it has become my favorite breakfast meal.
Well, actually everything with pumpkin in it, is my favorite!
Yep, I am one of those people who looks forward to the Fall season, which should really be called "Pumpkin Creamer season"!

May boost your Immunity.
May protect your Eyesight.
Pumpkin Spiritual Benefits:
A very resilient fruit, giving the energy of resilience to those who eat it.
It gives prosperity and abundance to your life.
Enables growth in all ways.
Balances Root Chakra.
So whether you are eating, smelling or using pumpkin in ritual work, it will be beneficial to you, in more ways than one!
Here is my transformed recipe:
Crystal Le Fay's Pumpkin Pie
About 1 cup of oatmeal (ground to a powder), I use a food processor.
About 6 tablespoon cold vegan butter.
About 1 tablespoon water or more depending on the consistency you like.
Olive oil/vegan butter (for coating pier dish/pan).
Mix ground oatmeal with butter, add water as needed, to make it a dough consistency. Butter or oil pie dish/pan.
Put oatmeal mixture in pie dish/pan and push out to fill dish, make sure to push up along the sides of the pie dish.
Put in fridge for about an hour.
Preheat oven to 350.
2 3/4 cup puree pumpkin or one 15 oz can of pumpkin
1/3 cup honey or maple syrup
1/3 brown, raw sugar or sugar substitute
1 Tbsp ghee or olive oil
2 Tbsp arrowroot
Dash of ginger, cinnamon, cardamom, salt and nutmeg
Mix all ingredients together.
For added energy, focus on the affirmation, "I am grounded and open to positive growth in all ways".
Bake in the oven for about an hour.
